Drum drying
Drum drying is a method used in the food processing industry to remove moisture from food products and produce dry powders, flakes, or sheets. It is a continuous process that involves the application of heat to a thin layer of material as it is rotated on the outer surface of a rotating drum or cylinder.

The drum drying process begins with the product being applied to the surface of a heated drum. As the drum rotates, the product is spread out into a thin film over the drum surface. The heat from the drum surface causes the moisture in the product to evaporate, leaving behind a dry product. The dried product is then scraped off the drum surface with a knife or blade and collected for further processing or packaging.

Drum drying is widely used in the production of various food products including milk powder, baby food, cereal, fruit purees, and vegetable purees. It is favored for its ability to produce products with good rehydration properties, making it ideal for products that will be reconstituted with water before consumption.

- Product Limitations: Not all products can be effectively dried using drum drying, especially those with high sugar content which can become sticky and difficult to remove from the drum surface.

- Single Drum Dryer: Consists of one rotating drum, suitable for small to medium-scale production.
- Double Drum Dryer: Utilizes two drums that rotate in opposite directions, which increases the surface area for drying and is used for large-scale production.
Environmental Impact[edit | edit source]
Drum drying, like other industrial processes, has an environmental impact, particularly in terms of energy consumption and emissions. However, advancements in technology are helping to make drum drying more energy-efficient and environmentally friendly.
