- Falfurrias is a city located in Brooks County, Texas, United States. As of the 2010 United States Census, the city had a population of 4,981. Falfurrias is the county seat of Brooks County. The city is named after Las Falfurrias, the ranch of Edward Cunningham Lasater, a prominent figure in the development of the Texas dairy industry.
