Fischer Brewery (French: Brasserie Fischer ) was a prominent brewery located in Schiltigheim, a suburb of Strasbourg in the Alsace region of France. Known for its distinctive beers, Fischer Brewery played a significant role in the local brewing industry until its closure in 2009.

Fischer Brewery was established in 1821 by Jean Fischer, a local entrepreneur with a passion for brewing. The brewery quickly gained a reputation for producing high-quality beers, leveraging the rich brewing traditions of the Alsace region. Over the years, Fischer Brewery expanded its operations and became one of the leading breweries in France.
In the late 20th century, Fischer Brewery was known for its innovative brewing techniques and a wide range of beer styles. The brewery's flagship beer, Fischer Amber, became particularly popular for its rich flavor and distinctive amber color.

In 2009, Heineken decided to close the Fischer Brewery, ending nearly two centuries of brewing history in Schiltigheim.
The closure of Fischer Brewery marked the end of an era for the local community and beer enthusiasts. However, the legacy of Fischer beers continues, with some of its recipes still being produced under the Heineken brand.
