Hamilton Distillers
Hamilton Distillers is a whiskey distillery located in Tucson, Arizona. It was founded in 2006 by Stephen Paul, a former furniture maker, and his daughter Amanda Paul. The distillery is known for its unique approach to whiskey production, using mesquite wood to smoke the malted barley used in the distillation process. This technique gives their whiskey a distinctive flavor that is characteristic of the Southwestern United States.

Stephen Paul, the founder of Hamilton Distillers, was originally a furniture maker who used mesquite wood in his designs. He began experimenting with the idea of using mesquite smoke to flavor whiskey after noticing the unique aroma the wood produced when it was being cut. In 2006, he established Hamilton Distillers to bring this idea to fruition.

Hamilton Distillers produces several types of whiskey under the brand name Whiskey Del Bac. These include:
- Dorado: A single malt whiskey that is smoked with mesquite wood, giving it a unique Southwestern flavor.
- Classic: A single malt whiskey that is not smoked, providing a more traditional whiskey flavor.
- Distiller's Cut: A limited edition single malt whiskey that is aged in used bourbon barrels.
Distillation Process[edit | edit source]
The distillation process at Hamilton Distillers begins with the malting of barley, which is then smoked using mesquite wood. This smoked malt is then mashed and fermented to produce a beer-like liquid. This liquid is then distilled to produce whiskey. The whiskey is aged in oak barrels for a period of time before being bottled and sold.
Recognition[edit | edit source]
Hamilton Distillers has received several awards for its whiskey. In 2015, their Dorado whiskey won the Best in Class Gold Medal at the American Distilling Institute's annual competition. In 2016, their Classic whiskey won a Double Gold Medal at the San Francisco World Spirits Competition.
