Honing steel, also known as a sharpening steel, chef's steel, sharpening rod, butcher's steel, and honing rod, is a rod of steel, ceramic, or diamond-coated steel used to re-align blade edges. They are essential tools in the maintenance of kitchen knives, enabling the user to maintain a sharp cutting edge on knives between more thorough sharpenings.

Overview[edit | edit source]

Honing steels are used by drawing the edge of a knife along the rod at a consistent angle, typically between 15 to 20 degrees, to realign the microscopic teeth in the blade. Unlike sharpening stones or knife sharpeners, honing steels do not remove significant amounts of material from the knife's edge, but rather straighten the existing edge, removing bends and realigning the cutting edge to restore sharpness.

Types of Honing Steels[edit | edit source]

There are several types of honing steels, each suited to different types of blades and sharpening needs:

  • Standard Steel Honing Rods: Made from hardened steel, these rods are effective for most traditional knives made of softer steel alloys.
  • Diamond-Coated Steels: These rods are coated with industrial diamonds, providing a slightly abrasive surface that can sharpen as well as hone the blade.
  • Ceramic Honing Rods: Made from ceramic materials, these rods offer a balance between honing and slight sharpening, suitable for maintaining blades that are already in good condition.

To effectively use a honing steel, the knife should be held in one hand and the steel in the other. The blade is then drawn down the steel at the appropriate angle with slight pressure, repeating on both sides of the blade to maintain an even edge. Regular honing is recommended to keep knives performing well, with the frequency depending on the amount of use the knife sees.

Honing steels require minimal maintenance but should be kept clean and dry to prevent rust or corrosion, especially steel rods. Diamond and ceramic rods can be cleaned with a damp cloth and mild detergent if necessary.
