Jennings Cox was an American engineer who is often credited with the invention of the Daiquiri, a popular cocktail made with rum, lime juice, and sugar. According to popular lore, Cox invented the Daiquiri while working in a small mining town near Santiago de Cuba. The story goes that Cox was entertaining guests and, finding himself out of gin, decided to use the local rum instead. He mixed the rum with lime juice and sugar to improve its palatability, creating a refreshing drink that was well received by his guests.

The drink was supposedly named after the nearby Daiquiri mines where Cox was working. While the exact truth of this story is difficult to verify, Cox is nevertheless often credited with popularizing the Daiquiri, if not outright inventing it.

The Daiquiri gained popularity in the United States in the early 20th century, especially after Admiral Lucius W.
