Koval Distillery is a craft distillery located in Chicago, Illinois. It was founded in 2008 by Robert and Sonat Birnecker, a husband and wife team. Koval Distillery is known for its production of organic and kosher spirits.

Koval Distillery was the first distillery to open in Chicago since the Prohibition era. The founders, Robert and Sonat Birnecker, left their academic careers to pursue their passion for distilling. They named the distillery "Koval," which means "blacksmith" in several Eastern European languages, as a tribute to Robert's Austrian heritage.

Koval Distillery produces a wide range of spirits, including whiskey, gin, vodka, and liqueurs. All of their products are made from scratch using locally sourced organic grains. They are also certified kosher by the Orthodox Union.
