Lentinus sajor-caju is a species of mushroom belonging to the Pleurotaceae family. It is commonly known as the Paddy Straw Mushroom or Indian Oyster Mushroom. This mushroom is widely cultivated and consumed in many Asian countries due to its nutritional and medicinal properties.

Taxonomy[edit | edit source]

The scientific name Lentinus sajor-caju was given by Fries, a Swedish mycologist. The genus name Lentinus is derived from the Latin word lentus, which means flexible or tough, referring to the texture of the mushrooms. The species name sajor-caju is derived from the local name of the mushroom in India.

Description[edit | edit source]

Lentinus sajor-caju is a saprophytic mushroom, meaning it feeds on dead organic matter. The cap of the mushroom is fan or oyster-shaped and can range from 5 to 25 cm in diameter. The color of the cap can vary from white to gray or tan. The gills are white and descend the short, off-center stipe. The spores are white to cream in color.

Lentinus sajor-caju is one of the most popular mushrooms for cultivation, especially in tropical and subtropical regions. It is commonly grown on straw of paddy, hence the common name Paddy Straw Mushroom. The mushroom can also be cultivated on other agricultural wastes including banana leaves, cotton waste, and sugarcane bagasse.

Lentinus sajor-caju is rich in protein, vitamins, and minerals. It is low in fat and cholesterol, making it a healthy food choice. The mushroom also has medicinal properties.
