List of choux pastry dishes
Choux pastry is a light pastry dough used in many pastries. It contains only butter, water, flour, and eggs. Instead of a raising agent, it employs high moisture content to create steam during cooking to puff the pastry. The pastry is named after the French word for cabbage, referring to its cabbage-like shape after cooking.
List of Choux Pastry Dishes[edit | edit source]
1. Éclair - An oblong pastry made with choux dough filled with a cream and topped with icing.
2. Profiterole - Also known as a cream puff in the United States, it is a filled French choux pastry ball with a typically sweet and moist filling of whipped cream, custard, pastry cream, or ice cream.
3. Croquembouche - A French dessert consisting of choux pastry puffs piled into a cone and bound with threads of caramel.
4. Paris-Brest - A French dessert, made of choux pastry and a praline flavoured cream.
5. Religieuse - A French pastry made of two choux pastry cases, one larger than the other, filled with crème pâtissière, most commonly chocolate or mocha.
6. Gougère - A baked savory choux pastry made of choux dough mixed with cheese.
7. Saint Honoré cake - A cake that combines choux pastry and puff pastry.
8. Chouquette - A type of viennoiserie consisting of a small portion of choux pastry sprinkled with pearl sugar.
9. Beignet - A type of fritter, or deep-fried pastry, typically made from choux pastry.
10. Windbeutel - A German dessert made of choux pastry, often filled with cream or fruit.
