Old Crow was first produced in the 1830s by Dr. James C. Crow, who worked at the Old Oscar Pepper Distillery in Woodford County, Kentucky. Dr. Crow is often credited with pioneering the sour mash process, which involves using a portion of the previous batch's mash to start the fermentation of the new batch. This process helps to maintain consistency and quality in the whiskey.

After Dr. Crow's death in 1856, the brand continued to be produced by various distilleries. In the 20th century, Old Crow became one of the best-selling bourbons in the United States. However, its popularity declined in the latter half of the century.
