Otoshi buta

Otoshi buta (落し蓋) is a drop-lid used in traditional Japanese cuisine. It is a circular lid that is slightly smaller than the diameter of the pot it is used in. The lid floats on top of the liquid in a pot to ensure heat is evenly distributed, ingredients are submerged, and flavors are well absorbed.
