Pierre Troisgros (3 September 1928 – 23 September 2020) was a French chef, who was one of the pioneers of nouvelle cuisine. He was born in Chalon-sur-Saône, Saône-et-Loire and started his culinary career in his family's hotel, Hotel Moderne, in Roanne, France.

Early Life and Career[edit | edit source]

Pierre Troisgros was born into a family of restaurateurs. His parents, Jean-Baptiste and Marie Troisgros, owned the Hotel Moderne in Roanne, where Pierre and his brother Jean began their culinary careers. After training in several prestigious kitchens, including Lucas Carton in Paris and La Pyramide in Vienne, Pierre returned to Roanne in 1954 to join his brother Jean in running the family restaurant.

Nouvelle Cuisine[edit | edit source]

In the 1960s, Pierre and Jean Troisgros became associated with the movement known as nouvelle cuisine. This style of cooking, which emphasized fresh ingredients, lighter sauces, and innovative combinations of flavors, was a departure from the heavier, more traditional French cuisine of the time. The Troisgros brothers' restaurant, renamed Les Frères Troisgros, became a flagship of this new culinary trend.

Recognition and Awards[edit | edit source]

Throughout his career, Pierre Troisgros received numerous awards and accolades for his contributions to French cuisine. In 1968, the Michelin Guide awarded Les Frères Troisgros its highest rating of three stars, a distinction the restaurant has maintained ever since. In 1996, Pierre was named "Chef of the Century" by the Gault Millau guide.
