This special pudding was the result of a nationwide competition held in the United Kingdom to find a new dessert that would become part of the celebrations for this historic occasion.

The idea for the Platinum Pudding competition was inspired by the success of previous royal-themed culinary creations, such as the Coronation Chicken for the Coronation of Elizabeth II in 1953. The competition was launched in January 2022 by Fortnum & Mason, in collaboration with The Big Jubilee Lunch and The Royal Household.
Amateur bakers from across the UK were invited to submit their recipes, with the aim of finding a dessert that was not only delicious but also easy to recreate at home. The competition received thousands of entries, showcasing the creativity and culinary skills of the British public.

The winning recipe was created by Jemma Melvin, a copywriter from Southport. Her creation, a lemon Swiss roll and amaretti trifle, was chosen for its simplicity, taste, and the way it captured the spirit of the Jubilee. The dessert features layers of lemon curd, St. Clement’s jelly, custard, amaretti biscuits, and whipped cream, topped with a chocolate shard and candied peel.
