Rufus Estes
Rufus Estes was an influential African-American chef, author, and culinary pioneer, best known for his cookbook, Good Things to Eat as Suggested by Rufus, which was published in 1911. Born into slavery in 1857 in Murray County, Tennessee, Estes rose from humble beginnings to become a respected chef in some of the most prestigious private clubs and dining cars on the major railroads of the United States.

Estes began his career in the restaurant industry before moving on to work for the Pullman Company, which was known for its luxury railroad cars. Estes' culinary skills were highly regarded, and he was known for his ability to create exquisite dishes under the challenging conditions of a moving train.
In 1911, Estes published his cookbook, Good Things to Eat as Suggested by Rufus.
