Sables are a type of French shortbread cookie that originated in the Normandy region of France. These delicate and buttery cookies are known for their sandy texture, which gives them their name. Sables are a popular treat in France and are often enjoyed with a cup of tea or coffee.

The history of sables can be traced back to the 17th century in the Normandy region of France. The word "sable" means sand in French, which perfectly describes the texture of these cookies. Gradually add the flour to the mixture, mixing until a dough forms. 4. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 1 hour. 5. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper. 6. Roll out the chilled dough on a lightly floured surface to a thickness of about 1/4 inch. 7. Use cookie cutters to cut out desired shapes and place them on the prepared baking sheet. 8. Bake the sables for about 12-15 minutes, or until the edges are lightly golden. 9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

While the traditional sable recipe is delicious on its own, there are many variations that you can try to add different flavors and textures to the cookies. Here are a few ideas:

  • Chocolate Sables: Add 50 grams of cocoa powder to the flour mixture for a rich chocolate flavor.
  • Almond Sables: Replace 50 grams of flour with ground almonds for a nutty taste.
  • Citrus Sables: Add the zest of one lemon or orange to the butter mixture for a refreshing citrus twist.

Sables are best enjoyed fresh, but they can be stored in an airtight container for up to a week. They make a great accompaniment to a cup of tea or coffee and can also be served as a dessert with a scoop of ice cream or a dollop of whipped cream.
