2. In a mixing bowl, add the mango pieces, sugar, salt, red chili powder, and turmeric powder. Mix well and let it sit for about 30 minutes. This will help the mangoes release their juices.
3. In a small pan, heat the vegetable oil. Add mustard seeds and fenugreek seeds. Let them splutter for a few seconds. Then, add asafoetida and turn off the heat. Allow the tempering to cool down.
