Under (restaurant)
Under is a restaurant located in Lindesnes, Norway. It is renowned for being the largest underwater restaurant in the world and the first of its kind in Europe. The restaurant offers a unique dining experience, combining gourmet cuisine with an underwater view of the marine life in the North Sea.
Design and Architecture[edit | edit source]
The restaurant was designed by the Norwegian architectural firm Snøhetta. The structure is a monolithic concrete form that extends five meters below the sea level. The design aims to integrate the building into its marine environment, providing a habitat for marine life to cling to and thrive on its surface. The panoramic window in the dining area offers a view of the seabed, allowing diners to observe the underwater ecosystem.
Cuisine[edit | edit source]
Under's menu is inspired by the surrounding landscape and seascape, focusing on locally sourced ingredients. The head chef, Nicolai Ellitsgaard, emphasizes sustainable practices and seasonal produce. The dishes often feature seafood, reflecting the restaurant's underwater theme, but also include a variety of other local ingredients.
Sustainability[edit | edit source]
Under is committed to sustainability and environmental responsibility. The restaurant collaborates with marine biologists to create a positive impact on the local marine environment. The building itself is designed to function as an artificial reef, promoting biodiversity in the area.
Awards and Recognition[edit | edit source]
Since its opening, Under has received numerous accolades for its innovative design and culinary excellence. It has been featured in various international publications and has become a popular destination for food enthusiasts and travelers.
