Variegated pink lemon
Variegated pink lemon, also known as Eureka lemon or Pink-fleshed Eureka lemon, is a cultivar of lemon (Citrus limon) that has a unique pink flesh, green-striped rind when ripening, and variegated foliage. It is a spontaneous mutation that was first discovered in Burbank, California in 1931.

The Variegated pink lemon is a medium-sized evergreen tree that typically grows up to 10-20 feet tall. The leaves are variegated, meaning they have different colors in different areas. They are green and cream-colored, which gives the tree a distinctive appearance. The fruit is similar in size to a standard lemon but has a green and cream-colored striped rind. As the fruit matures, the stripes fade and the rind turns yellow.
The most distinctive feature of the Variegated pink lemon is its pink flesh. The flesh gets its pink color from lycopene, a natural pigment that is also found in tomatoes and grapefruit. The flavor of the fruit is similar to a standard lemon, but slightly less acidic.
