Wahaca
Wahaca is a British restaurant chain that specializes in Mexican cuisine. It was founded in 2007 by Thomasina Miers, a former winner of the MasterChef television series, and her business partner Mark Selby. The name "Wahaca" is a phonetic version of "Oaxaca", a state in southern Mexico known for its culinary traditions.
History[edit | edit source]
Wahaca was established in August 2007, with its first restaurant opening in Covent Garden, London. The founders, Miers and Selby, aimed to provide a fresh and innovative take on traditional Mexican street food. The restaurant quickly gained popularity and expanded to multiple locations across the UK.
Cuisine[edit | edit source]
Wahaca's menu is inspired by the street food of Mexico, particularly that of the Oaxaca region. It includes dishes such as tacos, quesadillas, enchiladas, and churros. The restaurant is also known for its innovative specials and seasonal dishes, which often incorporate local and sustainable ingredients.
Sustainability[edit | edit source]
Wahaca has a strong commitment to sustainability. It was the first restaurant chain in the UK to be certified as carbon neutral, and it has implemented a number of initiatives to reduce its environmental impact. These include sourcing ingredients from sustainable sources, reducing food waste, and using energy-efficient appliances.
Reception[edit | edit source]
Wahaca has received positive reviews for its fresh and flavorful food, vibrant atmosphere, and commitment to sustainability. It has also won several awards, including the Sustainable Restaurant Association's "Sustainable Restaurant of the Year" award in 2016.
