Acetylpropionyl


Acetylpropionyl, also known as 2,3-pentanedione, is an organic compound with the formula CH3C(O)CH2C(O)CH3. It is a colorless liquid with a buttery flavor and is used in the flavoring industry. Acetylpropionyl is structurally similar to diacetyl, another compound used for its buttery flavor, but has a slightly different taste profile. It is used in a variety of food products, including popcorn, margarine, and baked goods, to impart a rich, buttery flavor. However, its use has raised health concerns, particularly in the context of "popcorn lung," a condition officially known as bronchiolitis obliterans.

Acetylpropionyl belongs to the class of diketones, compounds containing two carbonyl groups within their molecular structure. It is synthesized through the oxidation of 2-pentanol or by the dimerization of ketene. The compound is soluble in organic solvents but has limited solubility in water.

The safety of acetylpropionyl has been questioned due to its association with bronchiolitis obliterans, a serious lung disease. The condition was first identified in workers at a microwave popcorn processing plant who were exposed to high levels of diacetyl, which has a similar structure to acetylpropionyl. This has led to increased scrutiny of acetylpropionyl, especially in the context of its use in e-cigarettes and other vapor products. Regulatory agencies have recommended limiting exposure to these compounds in occupational settings.
