- Ashe County is a county located in the U.S. state of North Carolina. As of the 2010 census, the population was 27,281. Its county seat is Jefferson. The county was created in 1799 from the western part of Wilkes County. It was named for Samuel Ashe, a Revolutionary War patriot, a superior court judge, and, briefly, the governor of North Carolina.
