Codex Alimentarius is a collection of internationally recognized standards, guidelines, and codes of practice aimed at ensuring food safety and quality. The primary goal of the Codex Alimentarius is to protect the health of consumers and ensure fair practices in the food trade. It covers all aspects of food safety, including food hygiene, food additives, residues of pesticides and veterinary drugs, contaminants, labeling, and nutrition and foods for special dietary uses.

The Codex Alimentarius Commission (CAC) was established in 1963 by the Food and Agriculture Organization (FAO) of the United Nations and the World Health Organization (WHO). Since its inception, the Codex Alimentarius has developed into a global reference point for consumers, food producers, and processors, as well as national food control agencies and the international food trade.

Each committee is tasked with developing standards, guidelines, and codes of practice relevant to their area of focus.

The standards set by the Codex Alimentarius are considered as reference points for the resolution of disputes in the World Trade Organization (WTO) Agreement on the Application of Sanitary and Phytosanitary Measures (SPS Agreement).
