Cyclodextrins are a family of cyclic oligosaccharides, consisting of (α-1,4)-linked glucopyranose units. These compounds are produced from starch by means of enzymatic conversion. Cyclodextrins are widely used in food, pharmaceutical, and chemical industries due to their unique ability to form inclusion complexes with a variety of molecules, enhancing the solubility, stability, and bioavailability of guest molecules.

Structure and Types[edit | edit source]

Cyclodextrins are categorized based on the number of glucose units: Alpha-cyclodextrin (α-CD) with six glucose units, Beta-cyclodextrin (β-CD) with seven, and Gamma-cyclodextrin (γ-CD) with eight. Each type of cyclodextrin has a characteristic toroidal shape with a hydrophilic exterior and a hydrophobic cavity. This structure enables them to encapsulate hydrophobic molecules in aqueous environments, which is key to their functionality.

In the pharmaceutical industry, cyclodextrins are used to increase the solubility and stability of drugs.
