Dalmore distillery

From WikiMD's Food, Medicine & Wellness Encyclopedia

Dalmore Distillery is a distillery located in Alness, Scotland. It is owned by Emperador Inc., a Philippines-based company. The distillery is known for producing single malt Scotch whisky, a type of whisky that is made from malted barley in one distillery.

History[edit | edit source]

The Dalmore Distillery was established in 1839 by Alexander Matheson, a businessman who had made his fortune in the Opium Wars. The distillery was later purchased by the Mackenzie family in 1886. The Mackenzie family owned the distillery for almost a century, during which time they introduced the now-iconic 12-pointed Royal Stag emblem. The emblem was inspired by a legend in which a member of the Mackenzie family saved King Alexander III of Scotland from a charging stag.

Production[edit | edit source]

The Dalmore Distillery uses a unique process to produce its single malt Scotch whisky. The process begins with the malting of the barley, which is then mashed and fermented in wooden washbacks. The liquid is then distilled in copper pot stills, which are heated by a direct flame. The whisky is aged in oak casks, which impart a distinctive flavor to the final product. The Dalmore Distillery is known for its use of sherry casks in the maturation process, which gives the whisky a rich, fruity flavor.

Products[edit | edit source]

The Dalmore Distillery produces a range of single malt Scotch whiskies, including the Dalmore 12, Dalmore 15, Dalmore 18, and Dalmore King Alexander III. The distillery also produces a number of limited edition whiskies, such as the Dalmore Constellation Collection and the Dalmore Selected by Daniel Boulud.
