Ginataang manok
Ginataang Manok is a traditional Filipino dish that is part of the larger category of Ginataan dishes in Philippine cuisine. The term Ginataan refers to food cooked with Gata, or coconut milk. Manok is the Filipino word for chicken, thus Ginataang Manok translates to chicken cooked in coconut milk.
Ingredients[edit | edit source]
The main ingredients of Ginataang Manok are chicken, coconut milk, and green chili peppers. Other ingredients often include garlic, onion, ginger, spinach or chili leaves, and fish sauce or salt for seasoning. Some variations of the dish may also include lemongrass, turmeric, and paprika.
Preparation[edit | edit source]
The chicken is first sautéed with garlic, onion, and ginger until it turns light brown. Coconut milk is then added, along with the green chili peppers. The dish is simmered until the chicken is fully cooked and the coconut milk has reduced to a thick sauce. Spinach or chili leaves are added towards the end of the cooking process. The dish is typically served with white rice.
Variations[edit | edit source]
There are many regional variations of Ginataang Manok across the Philippines. Some versions may include other vegetables such as eggplant, string beans, and pumpkin. Others may use different types of meat, such as pork (Ginataang Baboy) or seafood (Ginataang Isda or Ginataang Hipon).
Cultural Significance[edit | edit source]
Ginataang Manok is a popular dish in the Philippines and is often served at home and at traditional Filipino gatherings and celebrations. It is a testament to the versatility of coconut milk as a base for many Filipino dishes and the country's affinity for combining savory and creamy flavors.
