Gustu is a renowned restaurant and culinary school located in La Paz, Bolivia. It was founded in 2012 by Claus Meyer, a co-founder of the world-famous Noma in Copenhagen, Denmark. Gustu is part of the Melting Pot Foundation, which aims to promote social change through culinary education and gastronomy.

History[edit | edit source]

Gustu was established with the vision of transforming the Bolivian culinary scene and providing opportunities for local talent. Claus Meyer, inspired by the success of Noma and the New Nordic Cuisine movement, sought to create a similar impact in Bolivia by focusing on local ingredients and traditional cooking techniques.

Concept[edit | edit source]

The restaurant emphasizes the use of indigenous Bolivian ingredients, many of which are sourced from small-scale farmers and producers. The menu at Gustu is designed to showcase the rich biodiversity of Bolivia, featuring unique ingredients such as quinoa, amaranth, and a variety of native potatoes.

Culinary School[edit | edit source]

In addition to the restaurant, Gustu operates a culinary school that provides training and education to young Bolivians from disadvantaged backgrounds. The school aims to equip students with the skills needed to pursue careers in the culinary industry, thereby fostering economic development and social mobility.

Recognition[edit | edit source]

Since its inception, Gustu has received numerous accolades and has been featured in various international publications. It has been listed among the best restaurants in Latin America and has played a significant role in putting Bolivian cuisine on the global culinary map.
