Jiffy Mix is a brand of baking mixes marketed by the Chelsea Milling Company. The company was established in 1901, as a traditional flour mill. By 1930 they had developed a prepared baking mix, and Jiffy Mix was introduced to the public.

The Chelsea Milling Company was established in 1901 by Harmon H. Holmes. In the early years, the company was a traditional flour mill. In 1930, under the leadership of Mabel Holmes, the company developed a prepared baking mix. This mix was the first of its kind and was marketed under the brand name "Jiffy". The mix was a success and the company began to focus on prepared baking mixes.

Jiffy Mix offers a variety of baking mixes. These include mixes for muffins, biscuits, pancakes, and brownies. The company also offers a cornbread mix, which is one of their most popular products.
