Lancashire hotpot is a traditional British dish originating from the county of Lancashire, England.   • 2 tablespoons flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Preparation[edit | edit source]

1. Preheat the oven to 180°C (350°F). 2. In a large frying pan, melt the butter over medium heat. Add the onions and cook until they are soft and translucent. 3. Add the lamb or beef chunks to the pan and cook until browned on all sides. Sprinkle the flour over the meat and onions, stirring well to coat. 4. Gradually pour in the stock, stirring constantly to avoid lumps. Bring the mixture to a boil and let it simmer for a few minutes until it thickens slightly. Season with salt and pepper to taste. 5. In a greased casserole dish, layer the sliced potatoes, carrots, and meat mixture, repeating the layers until all the ingredients are used. Finish with a layer of potatoes on top. 6. Cover the casserole dish with a lid or foil and place it in the preheated oven. Bake for approximately 2 hours, or until the meat is tender and the potatoes are golden brown.

Lancashire hotpot is traditionally served with pickled red cabbage or beetroot and crusty bread. It is a perfect dish for cold winter nights or as a comforting meal any time of the year.

While the traditional Lancashire hotpot recipe uses lamb or beef, there are variations that use other meats such as chicken or game. Some recipes also include additional vegetables like peas or leeks. The dish can be customized to suit individual preferences and dietary restrictions.
