Lark Distillery
Lark Distillery is a distillery located in Hobart, Tasmania, Australia. It was established in 1992 by Bill Lark, who is often referred to as the "godfather of Australian whisky." The distillery is known for producing single malt whisky, and it played a significant role in the revival of the Australian whisky industry.

Bill Lark established Lark Distillery after realizing the potential for whisky production in Tasmania. The island's cool climate, pure water sources, and availability of high-quality barley made it an ideal location for whisky production. Lark successfully lobbied the Tasmanian government to change the laws that had previously made distilling illegal in the state, paving the way for the establishment of Lark Distillery and the resurgence of the Tasmanian whisky industry.

Lark Distillery produces its whisky using traditional methods. The process begins with the malting of Tasmanian barley, which is then mashed and fermented. The resulting liquid, known as the "wash," is distilled in copper pot stills. The distilled spirit is then aged in oak casks, with the cool Tasmanian climate contributing to the whisky's unique flavor profile.
Lark Distillery produces several different types of whisky, including cask strength, single cask, and limited edition releases. The distillery also produces a range of other spirits, including gin and vodka.
