Maille (company)
Maille (company) is a French mustard, cornichons, vinegars, and olive oil producer that was founded in 1747 by Antoine-Claude Maille. The company is known for its wide range of mustards served on tap.

Antoine-Claude Maille started the company in 1747 in Paris, France. He was a vinegar maker and distiller who had been recognized by the French court. His creations were such a success that he was appointed the official supplier to many royal courts, including that of King Louis XV.
In 1930, Maille was purchased by the Grey-Poupon company. The two brands were merged to form a single company. In 1999, the company was acquired by Unilever, a multinational consumer goods company.

Maille is best known for its Dijon mustard, which is made from brown or black mustard seeds. The seeds are mixed with water, salt, and vinegar to create a smooth paste. The company also produces a range of other mustards, including whole grain and honey mustards.
In addition to mustards, Maille produces a variety of other condiments, including cornichons, vinegars, and olive oils. The company's cornichons are small, tart pickles that are often served with pâtés and cold meats. Maille's vinegars are made from a variety of fruits and wines, and its olive oils are sourced from select olive groves in the Mediterranean.

Maille operates a number of boutiques around the world, where customers can sample and purchase the company's products. These boutiques offer a wide range of mustards, vinegars, and oils, as well as gift sets and other gourmet items. Some of the boutiques also offer mustard on tap, which is served in traditional stoneware jars.
