Miami Subs Grill was founded by Gus Boulis who was originally from Greece. Boulis immigrated to the United States in the 1970s and initially started a successful fishing business in Key West, Florida. He later ventured into the restaurant business and opened the first Miami Subs Grill in 1988. The restaurant quickly gained popularity due to its unique blend of Greek and Italian fast food.
