Ontbijtkoek

From WikiMD's Food, Medicine & Wellness Encyclopedia

Ontbijtkoek (or peperkoek) is a traditional Dutch baked good, commonly consumed as part of breakfast or as a snack. It is a type of spice cake or gingerbread, and its name literally translates to "breakfast cake" in English.

History[edit | edit source]

The origins of ontbijtkoek are believed to date back to the Middle Ages, when spices became widely available in the Netherlands due to the spice trade. The cake was originally made with rye flour and honey, but the recipe has evolved over time to include a variety of spices and sweeteners.

Ingredients and Preparation[edit | edit source]

The main ingredients of ontbijtkoek are rye flour, brown sugar, baking powder, and a mix of spices such as cinnamon, cloves, ginger, and nutmeg. Some variations of the recipe may also include molasses, honey, or syrup as additional sweeteners, and butter or margarine to add moisture to the cake.

To prepare ontbijtkoek, the dry ingredients are mixed together, then the wet ingredients are added to form a batter. The batter is then poured into a loaf pan and baked until a skewer inserted into the center of the cake comes out clean.

Variations[edit | edit source]

There are several regional variations of ontbijtkoek in the Netherlands, each with its own unique combination of ingredients and flavors. For example, the Frisian version of the cake, known as kruidkoek, includes anise and allspice in addition to the traditional spices. In the Groningen region, the cake is often made with syrup and is called koek.

Serving and Consumption[edit | edit source]

Ontbijtkoek is typically sliced and served with butter. It can be eaten as is, or it can be used as a base for sandwiches. In the Netherlands, it is commonly consumed as part of breakfast or as a snack, and it is often served with coffee or tea.

Health Benefits[edit | edit source]

Due to its high rye content, ontbijtkoek is a good source of fiber. It also contains a variety of spices, which have been shown to have various health benefits. However, it is also high in sugar, so it should be consumed in moderation.
