Palo Cortado is a rare variety of sherry that originates from the Jerez region in Andalusia, Spain. It is a unique type of sherry that combines the aromatic refinement of Amontillado with the body and richness of Oloroso. The production of Palo Cortado is often considered a happy accident, as it begins its life as a Fino or Amontillado but develops characteristics more akin to an Oloroso.

Production Process[edit | edit source]

The production of Palo Cortado begins with the selection of high-quality Palomino grapes, which are the primary grape variety used in the production of sherry. The initial fermentation process is similar to that of Fino or Amontillado, where the wine is aged under a layer of flor, a type of yeast that forms on the surface of the wine and protects it from oxidation.

During the aging process, some barrels of wine destined to become Fino or Amontillado may lose their flor layer unexpectedly. When this occurs, the wine is reclassified as Palo Cortado. The absence of flor allows the wine to oxidize, developing a richer and more complex flavor profile similar to that of Oloroso.

Palo Cortado is known for its deep amber color and complex aroma, which often includes notes of hazelnuts, almonds, and dried fruits. The flavor is dry, with a full-bodied texture and a long, nutty finish. It is typically higher in alcohol content than Fino or Amontillado, often reaching around 17-22% alcohol by volume.

Palo Cortado is best served slightly chilled, around 12-14°C (54-57°F). It pairs well with a variety of foods, including cured meats, aged cheeses, and rich stews. Its complexity and depth also make it an excellent choice for sipping on its own as an aperitif or after a meal.
