Pecorino Sardo

From WikiMD's Food, Medicine & Wellness Encyclopedia

Pecorino Sardo is a traditional Italian sheep's milk cheese that is produced in the island of Sardinia. The cheese is made using raw milk and is aged for a minimum of 3 months. It has a hard texture and a strong, tangy flavor. Pecorino Sardo is often grated and used as a topping for pasta dishes, and also pairs well with fruits and nuts. It is protected by the European Union as a Protected Designation of Origin (PDO) product.
