Qurutob is a traditional dish originating from Tajikistan, and is also popular in other parts of Central Asia. It is considered one of the national dishes of Tajikistan and is widely enjoyed for its unique flavor and nutritional value. The dish is a combination of several ingredients, with the main components being qurut (dried balls of salty cheese), flatbread (typically called fatir or non), onions, and a variety of herbs and spices. A generous amount of herbs such as cilantro, dill, or parsley, along with spices like red pepper flakes, can be sprinkled over the dish to enhance its taste.

To prepare the qurut sauce, the dried qurut balls are first dissolved in water, sometimes with the addition of milk to create a creamy consistency. The mixture is then heated and stirred until it thickens. In some variations, garlic and other seasonings are added to the sauce for extra flavor.

The method of preparing the qurut sauce can also vary, with some cooks preferring to add a tangy or spicy twist to the traditional recipe.
