Saint-Bris Sauvignon

Saint-Bris AOC is a French Appellation d'Origine Contrôlée (AOC) for white wine in the Burgundy wine region. It is unique in Burgundy for being the only AOC that allows the use of the Sauvignon blanc and Sauvignon gris grape varieties. The appellation is located in the Yonne department, near the town of Auxerre and the famous wine village of Chablis.

History[edit | edit source]

The Saint-Bris AOC was officially recognized in 2003. Prior to this, wines from this area were labeled as Vin de Pays or under the broader Bourgogne AOC. The region has a long history of viticulture, with records dating back to the Middle Ages.

Geography and Climate[edit | edit source]

Saint-Bris AOC is situated in the northern part of the Burgundy wine region. The vineyards are planted on slopes with limestone-rich soils, which contribute to the distinctive minerality of the wines. The climate is continental, with cold winters and warm summers, which is ideal for the cultivation of Sauvignon blanc and Sauvignon gris.

Grape Varieties[edit | edit source]

The primary grape varieties permitted in Saint-Bris AOC are:

These varieties are known for producing aromatic wines with high acidity and notes of citrus, green apple, and sometimes tropical fruits.

Wine Characteristics[edit | edit source]

Saint-Bris wines are typically fresh and vibrant, with a pronounced acidity and a mineral backbone. The wines often exhibit aromas of citrus fruits, green apples, and sometimes more exotic fruits like passion fruit. They are usually consumed young to enjoy their fresh and fruity character.

Viticulture and Winemaking[edit | edit source]

Viticulture in Saint-Bris AOC follows traditional methods, with a focus on maintaining the health of the vines and the quality of the grapes. Winemaking practices aim to preserve the natural aromas and flavors of the Sauvignon grapes. Fermentation is usually carried out in stainless steel tanks to retain the wine's freshness.
