Saint-Bris AOC is a French Appellation d'Origine Contrôlée (AOC) for white wine in the Burgundy wine region. It is unique in Burgundy for being the only AOC that allows the use of the Sauvignon blanc and Sauvignon gris grape varieties. The appellation is located in the Yonne department, near the town of Auxerre and the famous wine village of Chablis.

The Saint-Bris AOC was officially recognized in 2003. Prior to this, wines from this area were labeled as Vin de Pays or under the broader Bourgogne AOC. The region has a long history of viticulture, with records dating back to the Middle Ages.
