Savatiano
Savatiano[edit | edit source]
Savatiano is the most widely planted white grape variety in Greece. It is primarily grown in the region of Attica, where it is used to produce a variety of wines, including the traditional Retsina.
History[edit | edit source]
The history of Savatiano dates back to ancient times. It is believed to have been cultivated in Greece for over 2000 years, making it one of the oldest grape varieties in the world. Despite its long history, Savatiano has often been overlooked in favor of more internationally recognized Greek grape varieties such as Assyrtiko and Agiorgitiko.
Viticulture[edit | edit source]
Savatiano is a hardy grape variety that is well adapted to the hot and dry conditions of the Mediterranean climate. It is resistant to drought and can produce high yields, making it a popular choice among Greek wine producers. The grapes are typically harvested in late August to early September.
Wine Production[edit | edit source]
Savatiano is used to produce a range of wine styles, from dry and aromatic whites to the resin-flavored Retsina. The grape's natural acidity and aromatic profile can produce wines with notes of citrus, peach, and tropical fruits. In recent years, some Greek winemakers have started to experiment with oak aging, which can add complexity and depth to Savatiano wines.
Food Pairing[edit | edit source]
Savatiano wines are versatile and can be paired with a variety of dishes. They are particularly well-suited to Greek cuisine, complementing dishes such as tzatziki, dolmades, and grilled seafood. The wine's acidity and fruitiness also make it a good match for spicy foods.
