Savuto DOC
Savuto DOC is a Denominazione di origine controllata (DOC) wine that is produced in the Italian region of Calabria. The DOC was established in 1975 and covers the production of red and rosé wine from the hills in the province of Cosenza.

The history of viticulture in the Savuto region dates back to the time of the ancient Greeks, who introduced the cultivation of grapevines to southern Italy. The region has a long tradition of producing wine, with the Savuto DOC being recognized in 1975.
Production[edit | edit source]
Savuto DOC is produced from a blend of grape varieties that are native to the Calabria region. The blend must include between 45-60% Gaglioppo, up to 25% Greco Nero, and up to 30% combined of Aglianico, Mantonico Bianco, Malvasia Bianca, and Pecorello. The wine is typically aged for a minimum of two years before it is released for sale.

Savuto DOC wines are known for their medium body and balanced acidity. They typically have a ruby red color and aromas of red fruits, spices, and earthy notes. The flavor profile often includes notes of cherry, plum, and black pepper, with a hint of minerality.

Savuto DOC wines pair well with a variety of dishes due to their balanced acidity and medium body. They are particularly well-suited to pairing with traditional Calabrian dishes such as 'nduja, a spicy, spreadable pork salumi, and caciocavallo, a type of stretched-curd cheese.
