Scotcheroos are a type of dessert bar that originated in the Midwestern United States. They are made with rice cereal, peanut butter, and chocolate and butterscotch chips. The name "Scotcheroos" is a play on the word "scotch," referring to the butterscotch used in the recipe, and "roos," which is short for kangaroos.

Preparation[edit | edit source]

  1. In a large saucepan, bring the sugar and corn syrup to a boil over medium heat. Remove from heat once the sugar is fully dissolved.
  2. Stir in the peanut butter until well combined.
  3. Add the rice cereal and stir until evenly coated.
  4. Press the mixture into a greased 9x13 inch baking pan.
  5. In a microwave-safe bowl, melt the chocolate and butterscotch chips together, stirring every 30 seconds until smooth.
  6. Spread the melted chocolate and butterscotch over the cereal mixture.
  7. Allow to cool before cutting into bars.

There are many variations of Scotcheroos, including adding marshmallows, using different types of cereal, or adding nuts or dried fruit. Some people also like to add a layer of caramel between the cereal mixture and the chocolate and butterscotch topping.
