Scotcheroos are a type of dessert bar that originated in the Midwestern United States. They are made with rice cereal, peanut butter, and chocolate and butterscotch chips. The name "Scotcheroos" is a play on the word "scotch," referring to the butterscotch used in the recipe, and "roos," which is short for kangaroos.
Ingredients[edit | edit source]
- 1 cup of sugar
- 1 cup of corn syrup
- 1 cup of peanut butter
- 6 cups of rice cereal
- 1 cup of chocolate chips
- 1 cup of butterscotch chips
Preparation[edit | edit source]
- In a large saucepan, bring the sugar and corn syrup to a boil over medium heat. Remove from heat once the sugar is fully dissolved.
- Stir in the peanut butter until well combined.
- Add the rice cereal and stir until evenly coated.
- Press the mixture into a greased 9x13 inch baking pan.
- In a microwave-safe bowl, melt the chocolate and butterscotch chips together, stirring every 30 seconds until smooth.
- Spread the melted chocolate and butterscotch over the cereal mixture.
- Allow to cool before cutting into bars.
Variations[edit | edit source]
There are many variations of Scotcheroos, including adding marshmallows, using different types of cereal, or adding nuts or dried fruit. Some people also like to add a layer of caramel between the cereal mixture and the chocolate and butterscotch topping.
