Stone Brewing Co. was established in 1996 in San Marcos, California, before moving to its current location in Escondido in 2005. The founders, Greg Koch and Steve Wagner, were inspired by the burgeoning craft beer scene and sought to create beers that were unique and full of character. Their first beer, Stone Pale Ale, set the tone for the brewery's future offerings.

In 2006, Stone Brewing opened the Stone Brewing World Bistro & Gardens, a restaurant and beer garden that showcases their beers alongside a menu of locally sourced food. The bistro has become a popular destination for both locals and tourists.
