Stuffed Bell Peppers
Keto Stuffed Bell Peppers are a hearty and flavorful dish perfect for dinner. By substituting high-carb rice with cauliflower rice, this classic dish becomes keto-friendly without sacrificing taste or texture.
Ingredients[edit | edit source]
- 4 large bell peppers
- 1 lb ground beef or turkey
- 1 cup cauliflower rice
- 1 cup shredded cheddar cheese
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce (unsweetened)
- 1 tsp paprika
- 1 tsp cumin
- Salt and pepper to taste
- Olive oil for sautéing
Instructions[edit | edit source]
- Preheat your oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add onions and garlic and sauté until translucent.
- Add the ground beef or turkey to the skillet. Cook until browned.
- Stir in the cauliflower rice, paprika, cumin, salt, and pepper. Cook for another 3-5 minutes.
- Pour in the tomato sauce and half of the cheddar cheese. Stir until well combined.
- Spoon the mixture into each bell pepper, pressing down gently to pack the filling.
- Place the stuffed peppers in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 25 minutes.
- Remove the foil and sprinkle the remaining cheddar cheese on top of each pepper.
- Bake for an additional 10 minutes or until the cheese is melted and bubbly.
