Sushi Saito is a renowned sushi restaurant located in Tokyo, Japan. It is owned and operated by master sushi chef, Takashi Saito. The restaurant is famous for its intimate dining experience, as it only seats eight people at a time. Despite its small size, Sushi Saito has earned three Michelin stars, making it one of the most prestigious sushi restaurants in the world.

Sushi Saito was established in 2000 by Takashi Saito. Prior to opening his own restaurant, Saito trained under sushi master Koji Sawada. Saito's dedication to his craft and his commitment to using only the freshest ingredients quickly earned him a reputation as one of Tokyo's top sushi chefs. In 2009, Sushi Saito was awarded its first Michelin star. It received its second star in 2010, and its third in 2011.

The menu at Sushi Saito changes daily, depending on what ingredients are available at the Tsukiji Fish Market. Saito personally selects each piece of fish that is served in his restaurant. The menu typically includes a variety of sushi and sashimi options, as well as a selection of cooked dishes. Some of the most popular items include the fatty tuna, sea urchin, and abalone.

Dining at Sushi Saito is a unique experience. The restaurant only has one sushi counter with eight seats, creating an intimate and exclusive atmosphere. Sushi Saito is located in the Roppongi district of Tokyo, inside the First Floor of Ark Hills South Tower. Due to its popularity and limited seating, reservations are highly recommended. However, securing a reservation can be difficult, as the restaurant is often booked months in advance.

In addition to its three Michelin stars, Sushi Saito has received numerous other accolades. It is consistently ranked as one of the best sushi restaurants in Tokyo by both local and international food critics. In 2016, it was ranked as the best sushi restaurant in the world by La Liste, a French restaurant ranking organization.
