Aguadito
Aguadito is a traditional Peruvian soup known for its vibrant green color and its status as a popular remedy for hangovers. It is also commonly referred to as Peruvian chicken soup or green chicken soup.
Ingredients and Preparation[edit | edit source]
The main ingredients of Aguadito are chicken, cilantro, rice, and vegetables. The distinctive green color of the soup comes from the cilantro, which is blended with garlic and peppers to create a paste. This paste is then cooked with the chicken and vegetables, and rice is added towards the end of the cooking process. Some variations of the recipe may also include corn, peas, carrots, and potatoes.
Cultural Significance[edit | edit source]
Aguadito is often served during the late hours of traditional Peruvian celebrations, such as weddings and New Year's Eve parties, as a preventative measure against hangovers. It is believed that the soup's high protein and nutrient content, along with its warm temperature, help to alleviate the symptoms of a hangover.
Variations[edit | edit source]
While chicken is the most common protein used in Aguadito, there are variations of the soup that use other types of meat, such as duck (Aguadito de Pato) or seafood (Aguadito de Mariscos). The seafood version typically includes a mix of fish, shrimp, squid, and mussels.
