To prepare Ayam Taliwang, follow these steps:
1. In a mixing bowl, combine the shallots, garlic, red chili peppers, bird's eye chili peppers, sweet soy sauce, lime juice, salt, and sugar. Mix well to create a marinade. 2. Add the chicken pieces to the marinade and coat them evenly. Let the chicken marinate for at least 1 hour to allow the flavors to penetrate. 3. Preheat the grill to medium-high heat. 4. Brush the grill grates with cooking oil to prevent sticking. 5. Place the marinated chicken pieces on the grill and cook for about 10-15 minutes on each side, or until the chicken is cooked through and slightly charred. 6. Remove the chicken from the grill and let it rest for a few minutes before serving.
