Cafe Rio, or Cafe Rio Mexican Grill, is a fast casual restaurant chain based in Salt Lake City, Utah, specializing in Mexican cuisine. The chain was founded in 1997 by Steve and Patricia Stanley in St. George, Utah.

Steve Stanley and Patricia Stanley founded Cafe Rio in 1997. The couple was inspired by the traditional cooking of the Rio Grande region of Northern Mexico, Southern Texas, and New Mexico. They hired a team of chefs to bring their vision to life, and the first Cafe Rio location was opened in St. George, Utah.

Menu[edit | edit source]

Cafe Rio's menu features a variety of Mexican dishes, including tacos, enchiladas, burritos, quesadillas, and salads. The restaurant is known for its fresh ingredients and made-from-scratch cooking. Each location has a tortilla maker who prepares tortillas on-site daily.

Expansion[edit | edit source]

Since its founding, Cafe Rio has expanded to over 120 locations in 11 states, including Nevada, Arizona, Colorado, Idaho, Maryland, Montana, Virginia, Washington, Wyoming, California, and Utah.

Awards and recognition[edit | edit source]

Cafe Rio has received numerous awards for its food and service, including the "Best of State" award in Utah for 13 consecutive years.
