Merken (or Merquén) is a distinctive Chilean condiment made from smoked chili peppers (specifically the Cacho de Cabra chili), toasted coriander seeds, salt, and sometimes dried garlic. It has a smoky, spicy flavor and is used to season meats, seafood, and vegetables. Merken can also be mixed with olive oil to create a spicy sauce for drizzling.

While Salsa Verde is not unique to Chile, the Chilean version of this "green sauce" has its own unique twist, incorporating ingredients like cilantro, parsley, garlic, onion, vinegar, and olive oil. It is often used to marinate meats or as a dipping sauce for bread and seafood.

Salsa Americana is a simple yet flavorful sauce made from finely chopped onion, carrot, and green chili pepper, marinated in vinegar, water, and salt. It is commonly served with hot dogs and sandwiches in Chile, adding a crunchy, tangy element to fast foods.
