Douchi (Chinese: 豆豉; pinyin: dòuchǐ) is a type of fermented and salted black soybean. In Chinese cuisine, it is one of the oldest known ingredients for fermentation dating back more than two thousand years. Douchi is made by fermenting and salting black soybeans; the beans are usually left to dry in the sun and then fermented with salt and other spices.
