Efo Riro

Efo Riro is a rich vegetable soup that is native to the Yoruba people of Western Nigeria. The name 'Efo' means vegetables, hence it is a Yoruba rich vegetable soup.

Preparation[edit | edit source]

The preparation of Efo Riro is quite easy if the steps are followed correctly. First, the meat is seasoned and boiled till it's soft. The spinach or shoko leaves are washed and sliced. The pepper, crayfish, and locust beans are blended together. The palm oil is heated and the onions, pepper mixture, locust beans, and crayfish are fried for few minutes. The meat stock is added and left to boil for few minutes. Finally, the spinach or shoko leaves are added and left to simmer for few minutes. The soup is then ready to be served.

Efo Riro can be served with Fufu, Amala, Pounded Yam, Eba, Rice, and other Nigerian staples.
