Galbitang
Galbitang is a traditional Korean soup made primarily from beef short ribs. The name "Galbitang" comes from "galbi" which means rib in Korean and "tang" referring to soup.

The main ingredient of Galbitang is beef short ribs. Other ingredients often include soy sauce, garlic, onion, black pepper, green onion, and radish. Some variations may also include noodles, mushrooms, or kimchi.
To prepare Galbitang, the ribs are first soaked in cold water to remove any blood, a process known as water blanching. The ribs are then boiled with the other ingredients until the meat is tender and the broth is flavorful. The soup is typically served hot and is often accompanied by a bowl of rice and kimchi.

Galbitang is a popular dish in Korea, particularly during the colder months as it is known for its warming properties. It is often served at special occasions and traditional holidays like Chuseok and Seollal.

There are several variations of Galbitang, including Baeksuk, which is a chicken-based soup, and Samgyetang, which includes ginseng and jujube in addition to chicken.
