  • 1 cup of water
  • Fresh cilantro, chopped (for garnish)

Follow these steps to prepare Geera Pork:

1. In a bowl, combine the ground cumin, ground coriander, turmeric powder, paprika, garlic powder, onion powder, dried thyme, salt, and black pepper. Mix well to create a spice blend. 2. Add the pork pieces to the spice blend and toss until they are well coated. Allow the pork to marinate for at least 30 minutes, or refrigerate overnight for maximum flavor. 3. Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat. Add the chopped onion, minced garlic, and scotch bonnet pepper (if using). Sauté until the onion becomes translucent and the garlic becomes fragrant. 4. Add the marinated pork to the skillet and cook until browned on all sides, about 5-7 minutes. 5. Pour in the water and bring it to a boil. Reduce the heat to low, cover the skillet, and simmer for about 1 hour or until the pork is tender and cooked through. 6. Once the pork is cooked, remove the lid and allow any excess liquid to evaporate, if necessary. Adjust the seasoning to taste. 7. Garnish with fresh cilantro and serve hot with rice, roti, or your preferred side dish.
